1 onion, chopped
Small eggplant, chopped
3 zucchini, chopped
3 cloves garlic, minced
1 can whole, peeled tomatoes
1 T tomato paste
1 T dried basil
1 T dried oregano
Fresh basil, torn
Fresh mozzarella, chopped
Salt and pepper to taste
Cooked whole grain pasta
Sauté onion and garlic in EVOO.  Add zucchini and eggplant.  Cook about 5 minutes.  
Add tomatoes, tomato paste and seasonings.  Cover and cook for 20-30 minutes.  Mash the tomatoes to release their juice.
Serve over cooked whole grain pasta.  Top with fresh basil and fresh mozzarella.
